Turkey and Lima BeansI love food! I love great tasting food like greens and sweet potatoes and macaroni and cheese, but I'm discovering new foods that are also delicious, and healthy for me. The result is, I'm still eating great tasting food, it's just not always
fried and laden with butter and sugar. I can really tell the difference in how I feel when I eat "fat" food than when I eat healthy food, so I'm learning to choose healthy foods everyday. I had to acquire a taste for lima beans, and I am so glad I have--they are DELISH! They are also easy to prepare. I like the large beans, but the small ones will work also. I always make a big pot, then portion out what I am going to eat immediately, and rest I freeze for later. The key is in the seasoning. You can use your favorite flavors (sometimes I put curry in them), but be sure to use the basics below. It's a simple dish, but takes a while to get to DELISH! Here's what you'll need: 2 turkey wings 1 large onion 1 of each: green, red and yellow pepper 1 large bag of lima beans 5-6 Bay leaves 2-3 cups of water Salt Pepper Other spices as you like--curry, Cajun seasoning 1. Wash the turkey and vegetables 2. Soak the lima beans in water until they are hydrated (they will look "puffed up") 3. Season the turkey with salt, pepper, other seasonings to taste 4. Cut the onion and peppers (strips or diced, whichever you prefer) 5. Starting with vegetables on the bottom, layer them with the turkey 6. Bake the turkey and vegetables in a 375 degree oven, covered for approximately 3 hours until the turkey is golden brown. 7. Transfer the turkey and vegetables into a large pot on top of the stove 8. Rinse the lima beans, then add them to the turkey 9. Add the water, just enough to cover the turkey and beans 10. Cover and cook approximately 2 hours on a medium flame, stirring occasionally until the beans are soft (you may want to add additional seasoning, but watch the salt. This dish is read to enjoy when the beans are soft and the turkey is falling off the bones!!!! A variation of this dish is to use cabbage in place of lima beans. |
Great SnacksGreek Yogurt and Fruit
This is one of my favorite snacks! The yogurt is just so smooth and creamy, and the fruit makes it sweet! 1/2 c Greek yogurt 1/2 c Fruit (mandarin oranges or pineapples) Erika's Ambrosia My "food of the Gods" is simply DELISH! 1/2 cup of each: mandarin oranges grapes kiwi peaches pears Toasted or plain coconut pecans or walnuts golden raisins 1 1/2 cups of Greek honey yogurt Wash and drain the fruit. Mix all the ingredients in a bowl. Place in the refrigerator for about an hour. Serving size 3/4 c Variation: use your favorite fruits or nuts |
